Tea and Tisanes 


We highly recommend you use the brewing guides for each product you purchase that is labelled on our packaging. We have tested our products rigorously before they are available to buy to ensure you receive the best flavor, experience and fullest expression for each beverage. To get optimum flavor and tactile balance from the infusion of your tea it is important to control the water temperature, the amount of tea and the steep (duration of infusion). 


Here is our quick guide to the perfect cup:


Tea Quality: A great brew starts with a great tea. Use high-grade tea, whose leaves have shape, size and aroma.

Teaware should be made of a non-porous porcelain, offer ample room for expansion of tea leaves and preserve a stable brewing temperature.

Water Quality: Use fresh filtered water, free from chlorine, fluoride or other chemical taints.

Quantity: Get yourself a pair of scales and correctly measure out the amount of tea required. It is crucial to perfecting your tea.

Water temperature:  Use a digitally controlled kettle that is able to deliver hot water to within 1 degree of the desired infusion temperature.


How do you recommend serving your Chocolate, Chai and Matcha?

Kali

For every 8g (.28oz) of chocolate, use 100ml (3.4 fl oz) of milk. Simply add contents to a jug and steam to desired temperature and sprinkle with our best loved garnish Kali Grand Kru Grated Couverture. 


Chai

Our Chai range is best suited with soy milk, as the combinations of the spices are very complimentary with this alternative milk. However please choose whatever is best for you as many people prefer other milk due to intolerances, allergies or taste preference. 


Matcha 

The traditional Japanese way of making Matcha is with a bowl and a whisk. However, if you do not have the equipment then please ensure that you stir (the required amount/insert the actual amount here) of matcha in your cup and dissolve with (insert amount here).


To brew tea consistently well you will require brewing equipment that accurately controls the variables. For Teas and Tisanes - we highly recommend using filtered water. Water from a coffee machine is highly discouraged due to the chemicals that are used in the machine.
